Your beet slaw looks delicious Alta! I LOVE beets, so I'll have to give this a try.

I actually use my Crock-Pot to keep the kitchen cool during the summer. It seems counter-intuitive, but it doesn't heat up the house as much as the oven does. I usually make things like BBQ chicken for sandwiches.

Like Wendy, I use my slow cooker to try and keep things cool in the kitchen. We also eat a lot of salads. Lots and lots of salads:)

I'm big on salads, and there is no heat required. We grow lettuce, so we use fresh, organic lettuce from the garden, our own cucumbers and onions and tomatoes, and I love some oiive oil and salt, with a splash of lemon juice. Very healthy and refreshing.
